Tessellate: Season 2

As summer comes to a close and we set our sights on the fall and winter seasons, we are pleased to announce round two of Tessellate, our beer pairing dinner series.

Hosting a variety of talented guest chefs with a diverse range of culinary backgrounds and collaborating to create distinctive menus with our beer was an idea born early on in the stages of opening the brewery. This idea of a modern day supper club, coupled with beer offerings from our cellar represents a pivotal experience we’re eager to share with you in our space.

Last season, we hosted fantastic chefs from Musang, Ursa Minor, and Kamonegi, and this time around we’re welcoming some new and familiar faces.

Kicking things off on October 10th we are welcoming back Chef Ashley Morford-Haines of Windward Adventures. Bringing her experience from Chez Panisse, the Herbfarm, and L’Oursin, Chef Ashley will present a five course family style dinner celebrating seasonal vegetables.

Seth and Zachary from Brothers & Co. will be joining us on October 17th with an eclectic array of Asian flavors raised in the Pacific Northwest over four courses. This dinner will be informed by the Brothers’ commitment to high quality locally sourced ingredients, including scratch made stocks, noodles, and fermented fare alongside bright and fresh herbs and aged vinegars.

Chef Jesus De Lara of Saint Bread will be helming a five course menu on October 24th focused on seasonality, fermentation, incorporating food within itself and a lot of vegetables. Chef De Lara takes his inspiration from working at Hat Yai, incorporating Thai flavors with ferments and his Mexican heritage.

The last dinner in our series on October 31st will be an innovative 8-course pairing experience curated by the wonderful Matia on Orcas Island. Purveying archipelago food culture at its best while preserving a sense of time and place is the focal point of the Matia team. We expect this to be a special evening.
