49th Street Beast Opens at Fair Isle Brewing
We are proud to present the next evolution of food at Fair Isle Brewing
49th Street Beast – opening today at 4pm.
From the onset, food and collaboration have been part and parcel to Fair Isle. It’s been a joy to host numerous pop-ups, guest chefs and events, and our new kitchen with Beast & Cleaver is another chapter in our pursuit to pair delicious food with our beer.
Spearheaded by executive chef Jaimon Westing and supported by @beastandcleavermain butcher shop on NW 80th St, the food at 49th St Beast is a marriage of fermented foods, dry aged meat, and classical French & English techniques with a modern twist. Designed as an open kitchen concept with a limited number of bar seats to provide customers a front row seat for food preparation. The menu is intentionally small with a balance of vegetables, sharable cuts of beef, and not to be missed desserts. Founded as an evolving kitchen, ingredients exchange hands between the brewer and the chef, think saisons brewed with house-made koji from the chef and a dessert incorporating the same lemon verbena and plums that Fair Isle used in a beer this past week.
49th Street Beast will start out operating five days a week, Wednesday – Sunday and Fair Isle will continue to host guest chefs for special events and collaborations.
