TESSELLATE DINNER WITH JAIMON WESTING – AMINO
We are thrilled to announce our Tessellate dinner series is back for Fall 2023. This is our idea of a modern day supper club. Collaborating with talented chefs from diverse backgrounds, we have curated distinctive menus coupled with Fair Isle beers. November 28th will be the first in the dinner series, hosted by Chef Jaimon Westing of Amino.
Jaimon Westing started cooking professionally in 2010 after graduating from Le Cordon Bleu in Portland, OR. He moved to the PNW in 2014 to join Maria Hines restaurants as Sous chef. From there, his success catapulted quickly as he took on the Executive Chef position at James beard nominated No Anchor Bar, Navy Strength, and Vinnie’s Wine Bar in 2017 and was then named a Rising Star by StarChefs in 2020. After taking some time off during the pandemic he spent the summer of 2021 in Denmark working in various Michelin starred kitchens such as Geranium and Barr. Since learning the basics of fermentation starting back in 2014 and finding a strong passion and connection to it, he wanted to celebrate and share all the wonders that fermentation brings to the table by launching the eclectic, heavily experimental fermentation focused pop-up Amino in 2022. In September of 2023 he proceeded to open 49th Street Beast at Fair Isle Brewing as Head Chef.
