Brothers & Co Tessellate Dinner
We are thrilled to announce our Tessallate dinner series is back for Fall 2022. Not just a simple food/beer pairing experience but a fuller collaborative exploration between Fair Isle’s brewers and some incredible chefs in the PNW.
Early on, we had planned to host talented guest chefs with a diverse range of culinary backgrounds and create distinctive menus paired with our beer, course by course. This idea of a modern day supper club, coupled with exclusive beer offerings from our cellar represents a pivotal experience we were aiming to share with guests in our space. Join us on October 17th as we host Brothers & Co.
Brothers & Co is the project of Seth and Zachary Pacleb. Born and raised in the Pacific Northwest, the Paclebs explore their home and heritage through their lifelong love of food. They have worked alongside celebrated chefs at Canlis, The London Plane, and Heavy Restaurant Group. The brothers have been serving their scratch-made ramen and tacos at Seattle area farmers markets since 2017, in tandem with numerous pop-ups and private catering events. The Paclebs create products that change with the seasons, and are deeply informed by local farmers and producers. They have a reverence for utilizing what the earth provides, but with as much joy and love as possible.
This experience of seven dishes over four courses will showcase an eclectic array of Asian flavors raised in the Pacific Northwest. At checkout, please let us know if you have any allergies or dietary preferences, but note that we cannot accommodate gluten free requests.
$130 per guest as communal seats or by table | Ticket price includes beer pairing and gratuity.
Doors open and happy hour starts at 5:30pm | Food service starts at 6:15pm and ends approximately 8:30-9:00pm | Guests are welcome to stay longer for a drink and conversation.
