W&L No. 018: Wilson
a hoppy oak-aged ale
Wilson began as pre-dryhopped Eugene, then entered into a first use Delille red wine barrel for three months; letting the second use mosaic hop character from Bobbi shine without the additional Citra hops. Wilson presents notes of blueberry, passionfruit, candied apricot, grapefruit pith, and an oak derived vanillin finish. The resulting flavor components from the spent mosaic astounded us, it was so much more present and complex then what we had imagined. It created a truly unique beer full of tropical flavors and not our house saison. Embracing this variation, we dry-hopped with Citra and produced Eugene.
