an oak-aged ale refermented with blackberries

Tove was our first fruited oak beer we released last year and batch two doesn’t disappoint. Doubling the amount of blackberries, Tove has notes of toasted pie crust, vanilla, summer conifer tips and a restrained acidity. Prominent fruity aromas give way to a lingering finish. Using blackberries from Sidhu Farms, grain from Skagit Valley and our house culture of wild and feral yeasts and bacteria, Tove celebrates the bounty of ingredients we have in the Pacific Northwest.

A mainstay in our fruited oak-aged beer series and the first we released, Tove features incredible Triple Crown blackberries grown by Sidhu Farms. The berries are the star of the show here, but their juiciness is complemented by notes of toasted pie crust, vanilla, and a lovely restrained acidity from a blend of oak-aged ales.
