biere de garde with smoked anjou pears
Batch E is a study in Maillard reaction. Beginning with an extended boil for our biere de Garde, we lagered the base beer in our freshly toasted Missouri Oak foeder, then refermented on Anjou pears over a bed of Texas and Oregon White Oak coals by Burn Unit BBQ.
The soft smoked character plays with the perceived sweetness from the extended boil and the rich body from the oak wood. Batch e ushers in the months to come, like sitting around a campfire on the Olympic Peninsula. Hold on to this one until the first big rain of the year.
