Batch D is re-fermented with Washington grown Gooseberries, our first time working with this small but mighty fruit, and then dry hopped with Vera hops before packaging. The base beer was brewed with a heavy hand of Mosaic and Enigma hops and aged in neutral white wine barrels for 10 months before refermenting with gooseberries for 10 weeks. After re-fermentation, we were getting notes of currants and tomato leaf and thought dry hopping with Vera would bring more citrus and tropical flavors. The end results bursts with flavors of kumquat, guava, citrus zest, tomato leaf, anise, and pepper. It’s not often we dry hop fruited beers, but we are quite pleased with the result and will explore this method more going forward. Batch D is one of the more unique beers we have made for the club!
The Knitting Circle is our award winning bottle membership. Our approach to these beers is not necessarily about finding the best barrel or using the most obscure and expensive ingredients. Instead, our intent is primarily twofold: to offer early insight into the direction of Fair Isle and to share small, thoughtful, experimental batches. We offer memberships to locals for pick up and shipping through Tavour.
