Batch C, our venerable blend of oak aged saisons, is back for Season 7! This year’s blend is a slight departure from previous years. This is the first year we blended from four different oak vessels, really leveraging the different nuances of the relationship between our house mixed culture and various oak barrels. The blend of beers is quite adventurous – one part spontaneously fermented beer from 2021, one part wet hop saison brewed in 2024, one part saison brewed with Hallertau Mittelfruh hops from 2021, and one part saison brewed with Tettnanger and Riwaka hops from 2025. The average time in oak for the total blend equals to just under 24 months. After re-fermenting in bottle for four months, Batch C is presenting notes of overripe white wine grapes, cherimoya, and pineapple. All with a custard like body and sweetness that helps balance the pleasant acidity.
