Batch B is a blend of saisons brewed with Krush and Dolcita hops and then blended again with a saison re-fermented with white peaches from the ‘25 harvest. Noble hops are extremely prevalent at Fair Isle, but we can’t deny the excitement of brewing saison with new world hops. Krush and Dolcita are examples of newer varieties developed here in the PNW, both bringing intense tropical fruit profiles to the beer. Drinking the saison we brewed with Krush was akin to having a mango smoothie while having the beer we made with all Dolcita hops had a complex flavor of peach rings, coconut, and pineapple. We loved the result of blending these two beers together and got quite excited about further blending this beer with a portion of Claude, our annual saison re-fermented with Washington grown white peaches. The result is a saison with extraordinarily complex peach notes. While finishing bone dry, there is a sweet and creamy daiquiri like undertone creating a vibrant fruit forward beer with a pleasant acidity.
The Knitting Circle is our award winning bottle membership. Our approach to these beers is not necessarily about finding the best barrel or using the most obscure and expensive ingredients. Instead, our intent is primarily twofold: to offer early insight into the direction of Fair Isle and to share small, thoughtful, experimental batches.
