Batch A started as a saison brewed with Washington barley and malted and flaked spelt. This saison spent six months in various puncheons in our taproom before being racked on to crushed and de-stemmed Riesling grapes from the ‘24 harvest. After two months of re-fermenting with the grapes, part of this beer was transferred to neutral gin casks for further maturation. This beer was eventually blended with a second-use saison that spent time on the same Riesling grapes to add complexity. Before packaging, this blended Riesling beer was steeped with dried Osmanthus flower from our friends at Miro Tea. Also known as “devilwood,” Osmanthus is a flowering plant most commonly found in eastern Asia at high altitudes. The flower has intense aromas of overripe stone fruit which definitely come through in the finished product. Although the flower is the dominant flavor profile here, the Riesling grapes and gin casks add nice floral notes of jasmine and rose.
