a saison refermented on raspberries
Himmat is our saison with raspberries, starting out with a grain bill featuring some amazing Elwha River Spelt and Monica Oat Pale by our friends at LINC Malt. Unlike the first batch of Himmat which fermented out entirely in stainless, this iteration spent three months in our foeder to round things out and add a touch more complexity. Notes of bright, fresh raspberries and wildflowers. If you’re a fruit fan, this saison is for you!
