Alicel is an exploration of the elegance of the noble hop, Hallertau Mittelfrüh. Hallertau Mittelfrüh is the workhorse hop here at Fair Isle, but has fallen out of the spotlight of the craft beer scene as bold, tropical and trendy hops prevail. As we often do at Fair Isle, we took the less traveled approach and created Alicel to celebrate everything we love about this hop – delicate and herbal. Brewed and dry-hopped with 3#s per barrel of Hallertau Mittelfrüh, Alicel has beautiful floral notes of honeydew melons and cucumbers and aromas that transport you to an early spring herb garden. Working with Linc Malts, we used a hint of raw wheat and Francin barley grown by Trico Farm in Island City, OR. Named after an unincorporated town adjacent to where our grain for this beer is grown in Eastern Oregon, Alicel ‘shows up on the map’. It’s right up the road from the farm, but all that is there now is the local grain elevator.
